This serves two
2 chicken breasts diced or 7-8 chicken tenders
2 tablespoons of olive oil
1 teaspoon of lemon zest
1/3 cup lemon juice
Preheat oven to 350 degrees. Mix olive oil, rosemary, lemon zest, lemon juice, and pepper in a small bowl. Place chicken on a cooking try lined with cooking paper. Pour the lemon and rosemary mix over the chicken, be sure to evenly coat all pieces.
Bake for 30-40 minutes depending on the thickness of the chicken.
